6 medium sweet potatoes, peeled and quartered
3 lbs. boneless pork shoulder, cubed
3 onions, sliced
4 tart apples, cored and sliced in rings
2 T. brown sugar
2 C. apple juice
1 T. Mansmith’s Rib Spice
Trim fat from pork and brown in heavy skillet. Arrange potatoes around edge of slow cooker, place half the meat in the middle. Top with half the onion slices and half of the apple slices. Sprinkle with half the brown sugar. Make another layer of meat, onions, apples and brown sugar. Combine apple juice and Rib Spice and pour over everything. Cook on low for 8 hours, or on high for 4 hours.
