Fish with Cilantro-Lemon Butter


1/4 Cup softened butter
1 T. chopped fresh cilantro
1 t. finely chopped jalapeno pepper
1 t. grated lemon peel
1/2 t. Lemon juice
4– 6 oz. fish steaks (halibut, swordfish, shark or salmon)
1 T. olive oil
Mansmith’s Chipotle Lime


Combine the butter, cilantro, pepper, lemon peel and juice in a small bowl and set aside. Brush both sides of fish with olive oil. Sprinkle with Chipotle Lime. Grill on an oiled, preheated grill for 5 minutes. Brush with olive oil, turn and continue cooking for another 5 to 7 minutes until fish begins to flake. Serve with butter mixture. “GRATE”
