Ingredients
The Salsa
1 small white onion, finely chopped
1 jalapeno pepper, finely chopped
1 large clove garlic, minced
4-5 tomatillos, husked and chopped
1 large avocado, peeled and chopped
¼ C. fresh cilantro leaves, finely chopped
1 ½ tsp. Mansmith’s Dry Fire or Chipotle Lime
A squeeze of lime juice
Mix all ingredients together, squeeze lime juice over and set aside.
The Shrimp
1 Tbsp. oil
2 tsp. Mansmith’s Chipotle Lime
1 lb. medium shrimp, peeled and deveined
8 corn tortillas
Fresh cilantro for garnish
Instructions
Heat the grill to medium-high. Mix the oil and the seasoning in a large bowl. Add the shrimp and stir to coat. Grill the shrimp until translucent, 1-2 minutes on each side. Grill the tortillas just until slightly charred. Spoon the salsa on the tortilla, add 2-3 shrimp and a sprig of cilantro. Serve with a wedge of lime.
