Chicken & Veggie Kabobs


4 C. vegetable pieces, (zucchini, peppers, onions, mushrooms)
1 lb. boneless, skinless chicken breasts, cubed
1/4 C. olive oil
2 T. vinegar
1 T. Mansmith’s Poultry Spice


Combine vegetables, chicken, oil, and Poultry Spice in a large glass bowl. Marinate for 30 minutes in refrigerator. Drain off marinade. Spear chicken and vegetables on skewers, adding more Poultry Spice. Grill kabobs for 10 to 15 minutes, or until chicken is done.
