Instructions
Rub one elk backstrap generously with Mansmith’s Crusting Rub. Lay thick strips of bacon on top and wrap with kitchen string or use toothpicks to hold. Place in glass baking dish. Bake for about 45 minutes at 425ºF just until medium rare. Delicious!!
