Ingredients
6 pounds spareribs, whole slabs
1 Tbsp. Mansmith’s Garlic Stuff
1 Tbsp. Mansmith’s Original Grilling Spice
1/2 Cup Mansmith’s Barbecue Paste
1 Cup chicken broth
1/4 Cup vinegar
1 Cup orange marmalade
Instructions
Combine all ingredients, except ribs, in a glass dish or resealable plastic bag. Marinate ribs in mixture for 12 hours, turning several times. Weave the whole racks of ribs on a spit, and cook over low coals for 1 – 1 ½ hours until fork tender.
Remember – If you want to baste the ribs while cooking, you will need to boil the remaining marinade before using, but basting’s not necessary because the meat juices and marinade roll around the surface rather than dripping off. The meat bastes itself.
