5 medium pear tomatoes, diced1 medium onion, diced5 serrano chiles or jalapeno peppers, diced½ C. fresh cilantro, chopped1 Tbs. Mansmith’s Chipotle Lime or Dry Firejuice of one lime

In a hurry? Instead of making meatballs, make “meat cubes”. Spread meat mixture in a jelly roll pan and bake, then just cut meat into squares.
