2 large ripe tomatoes, diced
¼ C. chopped cilantro
¼ C. finely chopped onion.
1 jalapeno pepper, seeded and finely chopped
3 Tbsp. lime juice
1 tsp. Mansmith’s Dry Fire
1 medium avocado
In a medium bowl, combine all ingredients except the avocado. Peel and dice the avocado and add to the tomato mixture. Let stand for 20 minutes before serving. Serve with Tequila Lime Chicken Breasts.
In a hurry? Instead of making meatballs, make “meat cubes”. Spread meat mixture in a jelly roll pan and bake, then just cut meat into squares.
