2/3 Cup Parmesan cheese, grated
1/2 Cup dry bread crumbs
2 tsp. Mansmith’s Original or Low Sodium Grilling Spice
5 medium zucchini, ends trimmed
1 Tbsp. olive oil
Mix cheese, crumbs, and spice, set aside. In another bowl, beat eggs. Cut zucchini in half crosswise, then cut lengthwise into quarters. Add to eggs & mix gently. Drain each stick briefly and roll in cheese mixture to coat. Lay sticks in greased 10″ x 15″ baking pan. Drizzle with oil, bake at 450 until coating is well browned and crusty (about 25 minutes).
