Potato Skins & Dipping Sauce


5 large potatoes, scrubbed
1/3 Cup margarine, melted
3/4 Cup cheddar cheese, grated
3/4 Cup jack cheese, grated
Mansmith’s Original or Low Sodium Grilling Spice to taste
Green Chili Dipping Sauce


Bake potatoes until soft. Let stand until cool enough to handle. Cut potatoes lengthwise into quarters. With spoon, scoop out potato, leaving 1/8″ thick shell. Save potato flesh for other use. Brush skins with butter, both inside and out. Place, skin side down, in a single layer on a 12″ x 15″ baking sheet. Sprinkle with Mansmith’s Grilling Spice, bake at 500 about 12 minutes (until crisp). Remove from oven and sprinkle with cheeses. Broil until cheese melts. Serve with Dipping Sauce.
